The Olive Grove is counting circa 700 olive trees, which are the Moraiolo type, Frantoio and Leccino, giving a unique blend, belonging to the famous area of the “Hills Assisi-Spoleto”, which is recognized for the quality of its olive oil production globally.
When collected at the beginning of November by stripping by hand the olive branches, the olives are immediately processed in oil mill to their maximum freshness and integrity with a slow and cold pressing, to maintain all the peculiar organoleptic characteristics.
